» Recipe of the Week
Sour Cream Enchiladas
  • 1-2 lbs ground beef
  • 16 oz sour cream
  • 3 cups(or more depending on taste) shredded cheese (I use a mexican blend, but you can just use cheddar)
  • 12 flour tortillas
  • 1 can cream of chicken soup
  • 1-2 small cans diced green chilis (depending on taste)

Preheat oven to 350 degrees. Brown ground beef. While beef is cooking, mix together soup, sour cream and green chilis. Spray bottom of 9x13 baking pan with pam or grease lightly. When beef is cooked and drained, start assembling enchiladas by putting a bit of beef, cheese and the sour cream sauce in each tortilla and rolling it up. Line enchiladas in pan, making them fit closely. When pan is full, pour remaining sauce on top of enchiladas and bake in oven for 45 minutes...Sprinkle more cheese on top for last 5 minutes of baking. These are so yummy! And even taste better reheated!! (Submitted by Janice)
